There's something about the new year that just makes my obsession with beans reignite! I had already decided this would be the year I finally start stockpiling dried beans and soaking them rather than using canned ones, so thank you for the super helpful recipe. Looking forward to seeing more food/cooking content from you <3
Totally agree re: both the fatphobic flavour of New Year’s resolution time and the pleasure of setting fresh intentions. And Substack definitely has me feeling nostalgic for livejournal - I’ve missed long form posts!
I have not been able to figure out how to cook dry beans... they always come out a little too crunchy and taste undone even with overnight soaking, multiple hours on stovetop, etc. Excited to follow along your bean adventure & maybe learn some things!
Obviously the type of bean you make and how old the beans are and the size of the beans etc. are going to affect how long cooking them takes, but I brined my BEP for 24 hours and I swear to god they only took, like, 20 minutes to cook in some broth. They were done before the sauce was done! Give it a shot.
Jeff VanderMeer has been talking about how much he enjoyed Scavengers Reign so it’s funny to see you mention him in relation to it. Obviously i really need to watch it!
Love this. Super excited about the cooking too. I love cooking and find it relaxing (esp as a break from writing). As a corollary, I love food memoirs. Over the break I read INSATIABLE, a gourmand's delight, as Gael Greene, the long time food critic for New York Magazine (early days, before the "food revolution in America") eats her way around New York and France, and leaps into bed with her faves in terms of chefs, "vital" men, celebrities etc. Quite entertaining, if politically incorrect in every possible way, except that she is a woman who knows her appetites! It was published in 2006, and mostly covers the 1960s and 70s.
